GET HEALTHY WITH VALENTINA
With summer right around the corner, many people start getting worried about whether or not their bodies are "ready" for beach weather. Healthy eating doesn't have to be torturous, though You can still have the body you always wanted by exercising on a regular basis and by eating real food - like these healthy treats for spring and summer.
Make small changes at a time - but don't shy away from making big changes, either. I just want you to consider how much of an impact small changes can make over time. We have a tendency to think that the only answer is hitting the 'reset' button. With these easy and healthy treats for spring and summer, know that you don't have to radically change your lifestyle to make a difference.
1 cup oat flour
1 handful spinach
1 tbsp green tea powder
Puree everything with a blender. While the griddle is heating let the pancake mixture sit and thicken.Scoop 1/4 cup batter onto the lightly greased griddle. Wait about 2-3 minutes, then flip and cook for another 1-2 minutes. Enjoy.
MATCHA LATTE BOWL
1 tsp green tea powder (matcha)
½ cup mint tea
½ cup almond milk
1tsp maple syrup or honey
2/3 cup oats
1 tsp chia seeds
Add a little hot water to matcha powder and whisk to make paste. Pour matcha paste into ½ a mug of steeped mint tea. Add ½ cup hot almond milk. Stir in 1 tsp maple syrup or honey.
Grind 2/3 cup oats. Put it into a bowl, add 1 tsp chia seeds. Add matcha mint tea and stir. Refrigerate oats overnight. Add your favourite toppings. Enjoy.
2 cups (10 1/2 ounces) frozen strawberries
2 frozen sliced bananas
4 tablespoons acai powder
1 cup unsweetened almond milk (or milk of choice)
2 tablespoons nut or seed butter (I used almond)
1/2 to 1 tablespoon honey, to taste
Add the frozen fruits, acai powder, almond milk, nut or seed butter, and honey to a blender. Blend until creamy and smooth, adding extra almond milk as needed to get the blender running. Aim for a frozen-yogurt consistency. Spoon the acai mixture into bowls. Add your favourite toppings. Enjoy.
COCONUT CHIA PUDDING
- 2 cups coconut milk
- 2 tbsp agave nectar or maple syrup (optional)
- 1 tsp vanilla extract
- 1 tsp matcha powder
- 6 tbsp chia seeds
Blend the milk, sweetener, vanilla, and matcha together in a blender till smooth.Pour the liquid over the chia seeds. Stir thoroughly. Stir again every few minutes for the next fifteen minutes. Then allow the mixture to sit for at least an hour (or overnight, in the fridge). Stir the mixture once more, and put it into a jar. Make plain chia pudding (this recipe minus the green tea powder). Add it to the jar and put some raspberries. Enjoy!
