When you work up a sweat, you work up an appetite. These monster peanut butter chocolate protein cookies deliver. They take their name after the fact that they triple in size when baked in the oven, granting you with more protein and less hunger. Made with chocolate whey, peanut butter, chia seeds, and flax seeds, these chocolate protein cookies will stave off hunger and help you recover. Prepare these cookies the night before a big race or before a sweat session with your favorite fitness app. You won't regret it.
Monster Peanut Butter Chocolate Protein Cookies
- 1/2 cup brown sugar or organic cane or coconut sugar (other ways to substitute)
- 2.5 tablespoons of natural peanut butter
- 2 small eggs or 1 large egg
- 2 scoops chocolate whey protein powder
- 1/4 cup dark chocolate chips
- 1/2 tbsp chia seeds
- 1/2 tbsp flax seeds
Preheat oven to 170C / 350F and line baking tray with non-stick parchment paper.
In a large bowl, cream sugar and peanut butter with a wooden spoon until mixture is light and fluffy. Add egg(s). Fold in protein powder, chocolate chips, chia seeds, and flax seeds until the mixture achieves a dough-like consistency.
Take three tablespoons of dough, roll together into a disc, and place on tray. Repeat until all dough is used. Bake cookies for 12-15 minutes, until cookies achieve desired consistency. Let cool on a wire rack for 15 minutes and enjoy.
