Healthy Peanut Butter and Banana Ice Cream

Certain flavour combinations never fail to please: apple and cinnamon, strawberry and rhubarb, and peanut butter and banana. Today, we’re working with the latter. Frozen and whipped into creamy spoonfuls of delight, this peanut butter and banana ice cream will satisfy your cravings for a decadent, sweet — yet healthy summer dessert that does not compromise on flavour.

Peanut Butter and Banana Ice Cream

Ingredients

  • 3 bananas
  • 4 tbsp peanut butter
  • 1 tsp pure vanilla extract
  • 1 tbsp of the milk of your choice
  • 1 tbsp honey

Slice bananas, place in freezer-safe bags, and chill for 1-3 hours. 

Once frozen, add bananas to a blender or food processor along with other ingredients. Blend until smooth and creamy.

The ‘ice cream’ can be eaten right away. For a firmer texture, refreeze the mixture in a container overnight. Add desired toppings. This banana peanut butter ice cream was topped with dark chocolate chips, flaked almonds, and raspberries.
