Banana Bread Cereal (Vegan + GF Option)

Make this banana bread cereal when you're craving something sweet, filling, and toasty. Perfect for long hikes and tough mornings, this protein-packed recipe is also vegan-friendly and can be prepared the night before you plan to eat it. This treat is infused with nutty and caramel flavours, without the refined sugars abundant in store-bought cereal.

Vegan Banana Bread Cereal

  • 1 tsp honey (can sub with coconut sugar or brown sugar)
  • 1-2 tsp maple syrup (optional)
  • 1/2 cup of melted coconut oil
  • 1 tsp vanilla extract
  • 2 ripe bananas
  • 2 cups of oats (use GF rolled oats if needed)
  • 1 1/2 tbsp chia seeds
  • 1 handful of almonds
  • 1 handful of unsalted mixed nuts

Preheat the oven to 180C or 350F. Mix honey, maple syrup, coconut oil, and vanilla extract together in a small bowl. Mash bananas and incorporate into the mix.

Combine oats, chia seeds, almonds, and mixed nuts. Pour honey mixture over dry ingredients and stir till combined. Spread over a lined baking sheet and bake for 15-25 minutes, checking every 5 minutes to ensure it doesn't burn. Cereal should be deep golden brown when ready.

Let cereal cool. Store in a container until ready to serve.
